Creating a listing with variations – pleaseeeee help!

Hello, could somebody help me… I’m trying to list a product with different variations.

For example I sell fragrance oils so would like a 10ml parent listing and the childs as different scents… baby powder, clean cotton, fresh linen ect, when I try to create the listing under the category arts and crafts/candlemaking/candle scents it is only giving me the option of choosing the variation as “colour” when Ideally this should be “scent name”.

I can see lots of listings on amazon with this correctly done – for example ASIN B09RTQFCCG – could somebody please help… this is driving me insane!
